Chinese Hot Mustard

  1. Mix the mustard and pepper together in a small bowl or jar, then add water and stir well until a liquid paste forms
    and no dry ingredients are noticed. Now add the oil and vinegar and stir until evenly combined.
  2. Let the mixture rest for 10 minutes covered, then stir to ensure consistency. 
  3. Now if you dare . . . taste your creation!  You will be pleasantly surprised because this is the real thing!  
    You can adjust it to your own preferences:
  4. Add a little more water or oil if you like a thinner consistency; 
  5. Add more vinegar if you like it more tart; 
  6. Omit the vinegar altogether if you like it spicier, because interestingly, vinegar makes your mustard a bit mellower in flavor; 
  7. Add more white pepper and/or mustard powder you like it spicier;
  8. You can even add a little sugar if you want to tone down the bitterness.
