Chinese Hot Mustard
Ingredients:
- 4 Tbsp Mustard powder
- 1/2 tsp White pepper
- 2 tsp Hot water
- 2 tsp Olive oil
- 2 tsp Rice vinegar
Instructions:
- Mix the mustard and pepper together in a small bowl or jar, then add water and stir well until a liquid paste forms
and no dry ingredients are noticed. Now add the oil and vinegar and stir until evenly combined.
- Let the mixture rest for 10 minutes covered, then stir to ensure consistency.
- Now if you dare . . . taste your creation! You will be pleasantly surprised because this is the real thing!
You can adjust it to your own preferences:
- Add a little more water or oil if you like a thinner consistency;
- Add more vinegar if you like it more tart;
- Omit the vinegar altogether if you like it spicier, because interestingly, vinegar makes your mustard a bit mellower in flavor;
- Add more white pepper and/or mustard powder you like it spicier;
- You can even add a little sugar if you want to tone down the bitterness.

Much thanks! Frankly I thought it was more complicated until I made it and enjoyed the vaporizing of my sinuses! This is the real stuff!
Super easy to make and really rocks fried shrimp and barbecued pork!
