Keto Soft Tortillas

 

Ingredients:

 

500ml / 2 cups    Coconut flower

120ml / 8 Tbsp   Psyllium husk

1 ltr    /  4 cups    HOT water

2 pcs                  Eggs

10ml  /  2 tsp       Seasoning salt (recommend Jane’s Crazy Salt)

 

 

Instructions:

 

SIFT then whisk the coconut flour, husk and seasoning salt together until there are no lumps. 

 

Add eggs and then gradually add the HOT water, stirring ingredients until a moist, crumbly dough forms.  Knead to be sure totally mixed.  Allow the dough to sit for 5 minutes to absorb the moisture.

 

We are making 12 tortillas.  Grab a small amount to create a dough ball. Place two dough balls onto a piece of parchment paper. Cover with another piece of parchment paper. Roll each portion to a thin 4 or 5-inch diameter circle. 

 

Preheat an 8-to-10-inch skillet over medium with a thin coating of olive oil.  Place two tortillas in the pan and fry for 2 minutes or until the underside is spotted. Flip and cook another two minutes and remove from the skillet.  Repeat olive oil coating for each round of cooking.

 

Allow to cool and then refrigerate. 

 

Prep Time 5 minutes; Cook Time 4 minutes
