Cheesy Baked Casserole – Chili flavor, no beans***

Ingredients:  

*Cook all of these together in a large pan, veggies first.
Preheat oven to 375 degrees / 170 degrees.

When veggies and chicken are well-cooked, combine all the ingredients in a large mixing bowl
(except sliced cheese, sour cream and cilantro).

Pour evenly into large, oiled 9” x 13” baking dish and cover with sliced cheese.

Cook for 45 minutes, let stand for 5 minutes, serve with sour cream and cilantro, serves 6.

*** Leave out the Cumin and Chili Powder for a more conventional tasting casserole, and maybe add zucchini and parsley.  

*** Use tuna, delete tomatoes and add celery for a tuna casserole
